Like I said the other day, I love slow cooker recipes. On days like today when I have errands and chores and homework to get done, it's a little reassuring to know that I'm not going to have to worry about making dinner. Tonight's experiement was Chicken Coconet Curry, though you couldn't really taste the coconut much. Next time I think I'll sprinkle a little shredded coconut on top of it and maybe some green onions for color.
Ingredients
- 2 chicken breasts, chopped
2 medium potatoes, chopped
1/2 large onion, chopped
1/2 cup shredded carrots
1 large red pepper, chopped
3 large green onions (scallions), chopped
1 can light coconut milk
2 tablespoons chili garlic sauce
3 cloves garlic, minced
4 tablespoons curry powder
Directions
Place all of the ingredients in a slow cooker and cook on low for six to eight hours. Serve over rice (not included in nutritional info).
