Roasted Potatoes, Peppers and Sausage

Today's dinner is going to be Roasted Potatoes, Peppers and Sausage.  There's only a little oil in it with some herbs for yummy flavor, plus it's made with turkey sausage, all of which helps make it healthier for you. 

Ingredients



    3 large potatoes, cut into bite sized pieces
    1 large onion, chopped into bite sized pieces
    2 large red peppers, chopped
    2 teaspoons olive oil
    1 tablespoon fresh rosemary
    3 cloves of garlic, minced
    1 13 ounce package of smoked turkey sausage, chopped into bite sized pieces

Directions

Preheat oven to 350.
Toss the potatoes, onion and peppers in a large bowl with the oil, rosemary and garlic until everything is evenly coated. Place on a greased baking sheet and cook for 15 minutes, stirring once to make sure nothing sticks to the pan.
Add the sausage to the pan and return to the oven, cooking for an additional 30 minutes, or until the potatoes are well cooked. Stir once or twice to make nothing sticks to the pan.
